Ingredients:
For the Dumplings:
- 4 large apples (such as Granny Smith)
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup granulated erythritol or your preferred keto-friendly sweetener
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
For the Sauce:
- 1/2 cup unsalted butter
- 1/2 cup granulated erythritol or your preferred keto-friendly sweetener
- 1 cup water
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon vanilla extract
Instructions:
For the Dumplings:
- Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×13-inch baking dish.
- Peel and core the apples, then cut each apple into 8 slices.
- In a large mixing bowl, combine the almond flour, coconut flour, granulated erythritol, baking powder, salt, ground cinnamon, ground nutmeg, and ground cloves.
- Add the cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
- Stir in the unsweetened almond milk and vanilla extract to form a dough.
- Roll out the dough between two sheets of parchment paper to about 1/4-inch thickness.
- Cut the dough into 8 equal squares.
- Place an apple slice on each dough square and fold the dough over the apple, sealing the edges. Repeat for all apples.
- Arrange the filled dumplings in the greased baking dish.
For the Sauce:
- In a saucepan, combine the unsalted butter, granulated erythritol, water, ground cinnamon, ground nutmeg, and vanilla extract.
- Bring the sauce to a boil over medium heat, stirring until the sweetener is fully dissolved.
- Pour the hot sauce evenly over the dumplings in the baking dish.
- Bake in the preheated oven for 40-45 minutes, or until the dumplings are golden brown and the apples are tender.
