Ingredients:

For the Dumplings:

  • 4 large apples (such as Granny Smith)
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or your preferred keto-friendly sweetener
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract

For the Sauce:

  • 1/2 cup unsalted butter
  • 1/2 cup granulated erythritol or your preferred keto-friendly sweetener
  • 1 cup water
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract

Instructions:

For the Dumplings:

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×13-inch baking dish.
  2. Peel and core the apples, then cut each apple into 8 slices.
  3. In a large mixing bowl, combine the almond flour, coconut flour, granulated erythritol, baking powder, salt, ground cinnamon, ground nutmeg, and ground cloves.
  4. Add the cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  5. Stir in the unsweetened almond milk and vanilla extract to form a dough.
  6. Roll out the dough between two sheets of parchment paper to about 1/4-inch thickness.
  7. Cut the dough into 8 equal squares.
  8. Place an apple slice on each dough square and fold the dough over the apple, sealing the edges. Repeat for all apples.
  9. Arrange the filled dumplings in the greased baking dish.

For the Sauce:

  1. In a saucepan, combine the unsalted butter, granulated erythritol, water, ground cinnamon, ground nutmeg, and vanilla extract.
  2. Bring the sauce to a boil over medium heat, stirring until the sweetener is fully dissolved.
  3. Pour the hot sauce evenly over the dumplings in the baking dish.
  4. Bake in the preheated oven for 40-45 minutes, or until the dumplings are golden brown and the apples are tender.
