Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar or lemon juice)
  • 1/2 cup unsalted butter, melted and cooled
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 and 1/2 cups fresh blueberries

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups with butter or cooking spray.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract until the mixture is smooth and well blended.
  4. Pour the wet ingredients into the bowl of dry ingredients. Use a spatula or wooden spoon to gently fold the ingredients together until just combined. Be careful not to overmix; a few lumps in the batter are fine.
  5. Gently fold in the fresh blueberries, being careful not to crush them.
  6. Using a cookie scoop or spoon, divide the batter evenly among the prepared muffin cups.
  7. Optional: Sprinkle a little granulated sugar on top of each muffin for a sweet and crunchy topping.
  8. Bake the Blueberry Muffins in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  9. Once done, remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Note: For extra bursts of blueberry flavor, you can add a few extra blueberries on top of each muffin before baking.
