Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar or lemon juice)
- 1/2 cup unsalted butter, melted and cooled
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- 1 and 1/2 cups fresh blueberries
Instructions:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups with butter or cooking spray.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract until the mixture is smooth and well blended.
- Pour the wet ingredients into the bowl of dry ingredients. Use a spatula or wooden spoon to gently fold the ingredients together until just combined. Be careful not to overmix; a few lumps in the batter are fine.
