Ingredients:
3 cups chopped cooked chicken
1 (16 ounce) container full-fat sour cream
1 cup chicken broth
1 (1 oz) package dry ranch seasoning mix (look for one with no added sugar)
4 strips cooked and crispy bacon (crumbled)
2 cups shredded cheddar cheese (choose full-fat cheese)
2 lb bag of cauliflower tots (a low-carb alternative to tater tots)
Directions:
- Preheat the oven to 350 degrees F (175ยฐC). Lightly grease a 9ร13 inch baking dish with cooking spray. Set it aside.
- In a large bowl, mix together the cooked chicken, full-fat sour cream, chicken broth, dry ranch seasoning mix (ensure itโs low-carb), crumbled bacon, and shredded cheddar cheese. Combine everything well.
- Gently fold in the cauliflower tots (or another low-carb tater tot substitute) into the mixture.
- Spoon the mixture into the prepared baking dish, spreading it out evenly.
