  • 450 kcal per serving
  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 (24-ounce) jar low-carb marinara sauce
  • 2 medium zucchinis, thinly sliced lengthwise
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish


  1. In a skillet, brown the ground beef over medium heat. Add onions and garlic, and cook until they’re softened and the beef is browned. Drain excess fat.
  2. Stir in the low-carb marinara sauce and Italian seasoning. Season with salt and pepper to taste.
  3. In your slow cooker, layer the ingredients as follows:
    • Spread a thin layer of the meat sauce on the bottom.
    • Add a layer of zucchini slices.
    • Spread a layer of ricotta cheese.
    • Sprinkle with mozzarella and Parmesan cheese.
    • Repeat the layers until you’ve used all the ingredients, finishing with a layer of cheese on top.
  4. Cover and cook on low for 4 hours, or until the zucchini is tender, and the cheese is bubbly and golden.
  5. Garnish with fresh basil leaves before serving.

Note: For a more traditional lasagna flavor, you can add a pinch of red pepper flakes to the meat sauce.
