- 450 kcal per serving
- 1 pound ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 (24-ounce) jar low-carb marinara sauce
- 2 medium zucchinis, thinly sliced lengthwise
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons Italian seasoning
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
- In a skillet, brown the ground beef over medium heat. Add onions and garlic, and cook until they’re softened and the beef is browned. Drain excess fat.
- Stir in the low-carb marinara sauce and Italian seasoning. Season with salt and pepper to taste.
- In your slow cooker, layer the ingredients as follows:
- Spread a thin layer of the meat sauce on the bottom.
- Add a layer of zucchini slices.
- Spread a layer of ricotta cheese.
- Sprinkle with mozzarella and Parmesan cheese.
- Repeat the layers until you’ve used all the ingredients, finishing with a layer of cheese on top.
- Cover and cook on low for 4 hours, or until the zucchini is tender, and the cheese is bubbly and golden.
- Garnish with fresh basil leaves before serving.
Note: For a more traditional lasagna flavor, you can add a pinch of red pepper flakes to the meat sauce.
