Ingredients:

2 cups thinly sliced cucumbers (about 3 cucumbers)
1 cup sliced celery
1/2 cup diced green pepper
1 medium onion, diced
1/4 teaspoon celery seed
1 (4-ounce) jar diced pimentos (undrained)
1/2 cup white vinegar
1/3 cup granulated erythritol or your preferred keto sweetener (adjust to taste)
1/4 teaspoon salt (or to taste)

Instructions:

In a large bowl, combine the sliced cucumbers, celery, diced green pepper, diced onion, celery seed, and diced pimentos.

In a separate bowl, heat the white vinegar until warm (not boiling). Stir in the granulated erythritol (or keto sweetener) and salt until they dissolve. Adjust the sweetness to your taste.

Pour the vinegar and sweetener mixture over the cucumber mixture in the large bowl.

Toss everything together until well coated.

Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.

Serve the keto-friendly Cucumber Salad as a side dish.
