Ingredients:

1/2 cup melted butter (1 stick)
1 cup granulated erythritol or your preferred keto sweetener
12 slices of keto-friendly bread (such as almond flour bread or coconut flour bread)
4 large eggs
1 1/2 cups unsweetened almond milk (or any unsweetened keto-friendly milk)
1 teaspoon vanilla extract
Chopped pecans or walnuts for topping (optional)
Powdered erythritol or powdered stevia for sprinkling (optional)
Sugar-free maple syrup for serving

Instructions:

In a microwave-safe bowl, melt the butter and then add the granulated erythritol (or your preferred keto sweetener). Stir until well mixed.

Pour the butter/sweetener mixture into the bottom of a 9ร—9-inch baking pan and spread it around evenly.

In a separate bowl, beat the eggs, almond milk, and vanilla extract.

Lay a single layer of keto-friendly bread slices in the pan.

Spoon half of the egg mixture over the bread layer.

Add a second layer of bread slices and spoon on the remaining egg mixture.

Cover the pan and refrigerate it overnight.

Preheat your oven to 350ยฐF (175ยฐC).

Bake the French Toast Bake for 30 minutes, covered.

After 30 minutes, uncover the pan, and if desired, sprinkle chopped nuts over the top.

Bake for an additional 15 minutes, uncovered, or until the top is golden brown.

Optionally, sprinkle powdered erythritol or powdered stevia on top for added sweetness.

Serve with sugar-free maple syrup for a keto-friendly breakfast.
