- 3ย Persian cucumbers
- 1ย bundle of green onions
- Tortilla chipsย for serving
Dressing
- 1ย cupย baby spinach
- 1ย cupย fresh basil
- 2ย garlic cloves
- 1ย small shallot
- Juice of 2 lemons
- ยผย cupย olive oil
- ยผย cupย cashews
- โ ย cupย grated parmesan cheese
- 2ย tablespoonsย Rice Vinegar
- 1ย teaspoonย salt
INSTRUCTIONS

Place chopped cabbage, cucumbers and green onions in a large bowl.

Add all the dressing ingredients to a blender or food processor and blend until creamy with a bright green color.
