There’s nothing quite like a steaming bowl of Homemade Chicken & Dumplings to warm your soul on a chilly day. This classic American comfort food is hearty, satisfying, and surprisingly easy to prepare at home.

Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons butter
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 bay leaf
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 egg
Instructions:
- In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, celery, and garlic. Sautรฉ for about 5 minutes until the vegetables start to soften.
- Add the chicken breasts, chicken broth, bay leaf, thyme, salt, and pepper to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes or until the chicken is cooked through.
- While the chicken is simmering, prepare the dumplings. In a mixing bowl, combine the flour, baking powder, and salt. In a separate bowl, whisk together the milk and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
- After the chicken has cooked, remove it from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Drop spoonfuls of the dumpling mixture into the simmering broth. Cover and simmer for an additional 15-20 minutes, or until the dumplings are cooked through and have puffed up.
- Remove the bay leaf and discard it. Taste the chicken and dumplings and adjust the seasoning with more salt and pepper if needed.
- Serve hot and enjoy your homemade chicken and dumplings!
Note: For a thicker broth, you can mix 2 tablespoons of cornstarch with a little cold water and stir it into the simmering broth until it thickens to your liking.
