Homemade Chicken & Dumplings

There’s nothing quite like a steaming bowl of Homemade Chicken & Dumplings to warm your soul on a chilly day. This classic American comfort food is hearty, satisfying, and surprisingly easy to prepare at home.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 egg

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté for about 5 minutes until the vegetables start to soften.
  2. Add the chicken breasts, chicken broth, bay leaf, thyme, salt, and pepper to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes or until the chicken is cooked through.
  3. While the chicken is simmering, prepare the dumplings. In a mixing bowl, combine the flour, baking powder, and salt. In a separate bowl, whisk together the milk and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. After the chicken has cooked, remove it from the pot and shred it using two forks. Return the shredded chicken to the pot.
  5. Drop spoonfuls of the dumpling mixture into the simmering broth. Cover and simmer for an additional 15-20 minutes, or until the dumplings are cooked through and have puffed up.
  6. Remove the bay leaf and discard it. Taste the chicken and dumplings and adjust the seasoning with more salt and pepper if needed.
  7. Serve hot and enjoy your homemade chicken and dumplings!

Note: For a thicker broth, you can mix 2 tablespoons of cornstarch with a little cold water and stir it into the simmering broth until it thickens to your liking.
