Ingredients:

For the French Toast “Bread”:

  • 2 large eggs
  • 2 tablespoons almond flour
  • 1 tablespoon unsweetened almond milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • Butter or coconut oil for cooking

For Topping:

  • Fresh berries (strawberries, blueberries, raspberries)
  • Sugar-free maple syrup
  • Whipped cream (sugar-free if desired)

Instructions:

Prepare the French Toast “Bread”:

  1. In a mixing bowl, whisk together the eggs, almond flour, unsweetened almond milk, vanilla extract, ground cinnamon, baking powder, and a pinch of salt until a smooth batter forms.
  2. Heat a non-stick skillet over medium heat and add a small amount of butter or coconut oil for greasing.
  3. Pour half of the batter into the skillet to form a round shape, like a pancake. Cook for about 2-3 minutes on each side or until it’s golden brown and cooked through. Repeat with the remaining batter.

Assemble and Serve:

  1. Place one “bread” on a plate and top it with fresh berries of your choice.
  2. Drizzle sugar-free maple syrup over the berries.
  3. Add a dollop of whipped cream on top (sugar-free if preferred).
  4. Place the other “bread” on top to create a sandwich.
