Ingredients:
For the French Toast “Bread”:
- 2 large eggs
- 2 tablespoons almond flour
- 1 tablespoon unsweetened almond milk
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- Pinch of salt
- Butter or coconut oil for cooking
For Topping:
- Fresh berries (strawberries, blueberries, raspberries)
- Sugar-free maple syrup
- Whipped cream (sugar-free if desired)
Instructions:
Prepare the French Toast “Bread”:
- In a mixing bowl, whisk together the eggs, almond flour, unsweetened almond milk, vanilla extract, ground cinnamon, baking powder, and a pinch of salt until a smooth batter forms.
- Heat a non-stick skillet over medium heat and add a small amount of butter or coconut oil for greasing.
- Pour half of the batter into the skillet to form a round shape, like a pancake. Cook for about 2-3 minutes on each side or until it’s golden brown and cooked through. Repeat with the remaining batter.
Assemble and Serve:
- Place one “bread” on a plate and top it with fresh berries of your choice.
- Drizzle sugar-free maple syrup over the berries.

- Place the other “bread” on top to create a sandwich.
