Ingredients:
- 4 lemons, zested and juiced
- 1/2 cup water
- 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
- 1 tablespoon chia seeds (optional, for thickening)
- 1 teaspoon vanilla extract (optional)
Instructions:
- Wash the lemons thoroughly, then zest them to collect the lemon zest. Set the zest aside.
- Juice the lemons to get approximately 1/2 cup of lemon juice.
- In a saucepan, combine the lemon zest, lemon juice, water, and powdered erythritol over medium heat. Stir well to dissolve the sweetener.
- If you prefer a thicker jam-like consistency, add chia seeds to the mixture. This step is optional, but chia seeds will help thicken the jam. Stir them in and let the mixture simmer for about 15-20 minutes, or until it reaches your desired thickness.
- Remove the saucepan from the heat and stir in the vanilla extract if you’re using it.
