Ingredients:

  • 2 tablespoons melted unsalted butter
  • 1 tablespoon powdered erythritol or sweetener of choice

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered erythritol or sweetener of choice
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of one lemon (optional)

Instructions:

  1. Preheat your oven to 325°F (163°C) and line a mini muffin tin with paper liners.
  2. In a mixing bowl, combine almond flour, melted unsalted butter, and powdered erythritol. Mix until the ingredients come together to form a dough.
  3. Divide the dough into 12 equal portions and press each portion into the bottom of a paper liner in the muffin tin. This will be your cheesecake crust.
  4. In a separate mixing bowl, beat the softened cream cheese until smooth.
  5. Add powdered erythritol, egg, vanilla extract, and lemon zest (if using) to the cream cheese. Mix until all ingredients are fully combined and the mixture is creamy.
  6. Spoon the cheesecake filling evenly into the muffin tin cups over the crusts.
