Ingredients:
- 2 cups almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol (or your preferred keto-friendly sweetener)
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 cup mascarpone cheese
- 2 cups brewed strong coffee, cooled
- 1/4 cup dark rum or coffee liqueur (optional)
- Unsweetened cocoa powder for dusting
- Dark chocolate shavings for garnish
Instructions:
- In a mixing bowl, combine almond flour, cocoa powder, powdered erythritol, and vanilla extract. Mix until a crumbly dough forms.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the mascarpone cheese into the whipped cream until smooth and well combined.
- Layer the bottom of a serving dish with half of the almond flour mixture.
- Combine the cooled coffee and rum (if using) in a shallow dish.
- Dip ladyfinger cookies or almond flour biscuits into the coffee mixture, then arrange them on top of the almond flour layer.
- Spread half of the mascarpone mixture over the ladyfingers.
- Create another layer by repeating steps 4-7 with the remaining ingredients.
- Dust the top of the tiramisu with unsweetened cocoa powder.
- Cover and refrigerate the tiramisu for at least 4 hours or overnight to allow the flavors to meld.
- Before serving, garnish with dark chocolate shavings.
Note: For a non-alcoholic version, skip the rum or coffee liqueur and use a little extra coffee for soaking the ladyfingers.
