Ingredients:
2 zucchini
1 red onion
500 g of ground beef or a lean meat of your choice
1 egg
Salt and pepper
Sweet paprika
5 g of fresh cilantro (coriander)
4 g of ginger (optional)
30 g of grated Parmesan cheese or a keto-friendly cheese alternative
50 g of almond flour or crushed pork rinds for a low-carb breadcrumb substitute
Chili pepper oil (optional)
200-250 g of sugar-free tomato sauce (check the label for low-carb options)
Olive oil
Salt and pepper
150 g of mozzarella cheese or a low-carb cheese alternative
Directions:
Cut the zucchini into very thin slices.
In a mixing bowl, combine the ground meat, finely diced red onion, egg, spices (salt, pepper, sweet paprika, and optional ginger), fresh cilantro, grated Parmesan cheese, and almond flour (or crushed pork rinds for a low-carb option). Mix until well combined.
Shape the meat mixture into rolls and place them in a baking dish with a layer of sugar-free tomato sauce on the bottom.
Drizzle with some olive oil and bake at 180°C (350°F) for 25 minutes.
After 25 minutes, remove from the oven and add mozzarella cheese (or a low-carb cheese alternative) on top of each roll. Return to the oven and bake for another 10-15 minutes or until the cheese is melted and bubbly.
