Keto Banoffee Pie

Keto Banoffee Pie is a combination of banana and toffee flavors. This recipe is made of pie crust with caramel filling topped with banana slices, whipped cream, and grated chocolate. We use gluten-free Almond flour and banana flavoring in place of banana slices to cut down on carbs. A person following the Keto diet can eat this yummiest Keto Banoffee Pie without any guilt of taking excess carbohydrates. The actual Banoffee Pie is high in carbs because actual bananas and flour with gluten are used in the pie crust. This Keto version of Banoffee Pie is delicious and keto-friendly for people following the Keto diet because of its low carbohydrate content.

TIPS

If you want your pie filling not to be runny then follow these tips:
  • Use Cornstarch with Allulose powder to avoid the caramel filling being runny.
  • Whipped cream till soft peaks are formed so it would not be runny.
  • If you are using some of the bananas use the ripe bananas for better taste but don’t use overly ripe bananas to maintain the texture of the pie filling.
  • You can use any option for garnishing like cocoa powder, chocolate chips/shavings.

INGREDIENTS

  • A quarter cup of melted butter
  • 1 ½ cup of Almond flour
  • 6 Tbsp of sweetener (Allulose ) or adjust it according to taste.
  • 1 tsp OF Vanilla extract
  • One Cup of Double Cream
  • ½ tsp of Cinnamon Powder.
  • 20 drops of banana extract
  • A quarter cup of chocolate chips for garnishing.

INSTRUCTIONS

  1. Grease a pie baking dish and Warm your oven to 180 C.
  2. Mix Almond flour, melted butter, and allulose powder in a bowl till crumbs are made.
  3. Then set this flour in a pie dish with the help of any flat surface.
  4. Prick holes to avoid bubbling.
  5. Bake until golden brown.
  6. Allow it to cool and make a caramel(toffee) filling.
  7. To make the filling, add butter and allulose to a saucepan and heat it till the butter melts.
  8. Stir occasionally.
  9. At this stage, add cream and banana extract.
  10. Allow it to thicken on the lowest flame possible till it coats the back of a spoon.
  11. Put it down from the stove and let it cool completely.
  12. After that pour the caramel filling with banana flavor in the baked pie crust.
  13. Then refrigerate it to set.
  14. After some time, top it with whipped cream and chocolate chips/shavings.
  15. Now your delicious Keto-friendly dish is ready to serve.

STORAGE INFORMATION:

You can wrap and keep the pie in cold storage if you want to store the pie for a short term like 1-3 days. Cover the Banoffee pie with parchment paper and put it in a zip-lock bag for about a month in the freezer.
When you want to serve, Let it come to room temperature then add whipped cream and garnishings.
