  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 tablespoon apple cider vinegar
  • 1/4 cup sour cream
  • 1 teaspoon xanthan gum (optional for improved texture)

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease it with butter or cooking spray.
  2. Combine Dry Ingredients: In a mixing bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, and xanthan gum (if using).
  3. Cut in the Butter: Add the cold, cubed unsalted butter to the dry mixture. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Prepare the Wet Mixture: In another bowl, whisk together the eggs, unsweetened almond milk, apple cider vinegar, and sour cream until well combined.
  5. Combine Wet and Dry Mixtures: Pour the wet mixture into the dry mixture and stir until a dough forms. It should be slightly sticky but manageable. If it’s too sticky, you can add a bit more almond flour.
  6. Shape the Biscuits: Divide the dough into 8 equal portions. Shape each portion into a biscuit shape and place them on the prepared baking sheet.
  7. Bake: Bake the biscuits in the preheated oven for 12-15 minutes or until they turn golden brown and a toothpick inserted into the center comes out clean.
  8. Serve Warm: Allow the biscuits to cool slightly before serving. Enjoy them warm.

Note: These Keto Buttermilk Biscuits are a delightful addition to any keto meal, offering the taste of classic buttermilk biscuits without the carbs.
