Ingredients:

  • 1 large head of cabbage
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup cauliflower rice
  • 1/4 cup diced onions
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes (adjust to taste)
  • 1 1/2 cups sugar-free tomato sauce
  • 1/2 cup beef broth
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Cabbage: Start by boiling a large pot of water. Carefully remove the cabbage leaves and blanch them in the boiling water for 2-3 minutes until they are pliable. Remove, drain, and set aside to cool.
  2. Make the Filling: In a mixing bowl, combine the ground beef, ground pork, cauliflower rice, diced onions, minced garlic, egg, salt, black pepper, oregano, paprika, and red pepper flakes. Mix until well combined.
  3. Roll the Cabbage Rolls: Take each cabbage leaf and place a portion of the filling at the base of the leaf. Roll it up, folding in the sides as you go, to form a neat roll.
  4. Cook the Rolls: In a large skillet, place the cabbage rolls seam-side down. Pour in the sugar-free tomato sauce and beef broth. Cover and simmer over low heat for 30-35 minutes, or until the cabbage is tender and the filling is cooked through.
  5. Serve: Garnish with fresh parsley and serve hot.

Note: You can also bake the rolls in the oven at 350°F (175°C) for 30-35 minutes.
