Ingredients:
- 1 large head of cabbage
- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup cauliflower rice
- 1/4 cup diced onions
- 2 cloves garlic, minced
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes (adjust to taste)
- 1 1/2 cups sugar-free tomato sauce
- 1/2 cup beef broth
- Fresh parsley for garnish
Instructions:
- Prepare the Cabbage: Start by boiling a large pot of water. Carefully remove the cabbage leaves and blanch them in the boiling water for 2-3 minutes until they are pliable. Remove, drain, and set aside to cool.
- Make the Filling: In a mixing bowl, combine the ground beef, ground pork, cauliflower rice, diced onions, minced garlic, egg, salt, black pepper, oregano, paprika, and red pepper flakes. Mix until well combined.
- Roll the Cabbage Rolls: Take each cabbage leaf and place a portion of the filling at the base of the leaf. Roll it up, folding in the sides as you go, to form a neat roll.
- Cook the Rolls: In a large skillet, place the cabbage rolls seam-side down. Pour in the sugar-free tomato sauce and beef broth. Cover and simmer over low heat for 30-35 minutes, or until the cabbage is tender and the filling is cooked through.
- Serve: Garnish with fresh parsley and serve hot.
Note: You can also bake the rolls in the oven at 350°F (175°C) for 30-35 minutes.
