Ingredients:

For the Taco Filling:

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning (look for one with no added sugar)
  • Salt and pepper to taste
  • 1/4 cup water

For the Taco Pockets:

  • 2 cups shredded cheddar cheese
  • 4 large lettuce leaves (such as iceberg or romaine)
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup sliced black olives
  • Sour cream and avocado slices for topping (optional)

Instructions:

For the Taco Filling:

  1. In a large skillet over medium-high heat, cook the ground beef until it’s browned and crumbled. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the skillet with the beef. Sauté for a few minutes until the onion is translucent.
  3. Stir in the taco seasoning, salt, and pepper. Add the water and let the mixture simmer for 5-7 minutes, allowing the flavors to meld and the liquid to reduce. Remove from heat.

For the Taco Pockets:

  1. Preheat your oven to 375°F (190°C).
  2. On a baking sheet lined with parchment paper, arrange four piles of shredded cheddar cheese, shaping them into circles about 4-5 inches in diameter. Leave some space between each pile.
  3. Bake the cheese piles for 7-10 minutes or until they turn golden brown and slightly crispy. Remove from the oven and let them cool for a minute or two.
  4. Carefully peel the cheese circles off the parchment paper while they’re still warm, and place them on a clean surface.
  5. Assemble your taco pockets by placing a lettuce leaf on each cheese circle, followed by a generous spoonful of the taco meat mixture.
  6. Top with diced tomatoes, red onion, and sliced black olives.
  7. Fold the sides of the cheese circle over the filling to create a pocket.
  8. Serve your Keto Cheesy Taco Pockets with sour cream and avocado slices if desired.
