Ingredients:

• 1/2 cup of butter (113 g)
• 3/4 cup of granulated erythritol or monk fruit sweetener (144 g)
• 1 egg
• A pinch of salt
• A few drops of vanilla extract
• 2 cups of almond flour (224 g)
• 1/2 teaspoon of baking powder
• 1/2 cup of sugar-free chocolate chips (85 g)

Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or spray with cooking spray.

In a large bowl, beat the butter at room temperature with the sweetener until light and fluffy. Add the vanilla extract, salt and egg and mix well.

Sift the almond flour and baking powder and add them to the butter mixture. Stir until well combined. Fold in the chocolate chips.

Form a ball of soft dough and refrigerate for at least 30 minutes.

Roll out the dough about 1/4 inch thick and cut out circles with a cookie cutter or a glass. Place them on the prepared baking sheet, leaving some space between them.

Bake for about 7 minutes or until the edges of the cookies are slightly golden. Don’t overbake them or they will become too hard as they cool.

Let them cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
