Keto Chocolate Chip Cookies
These keto-friendly cookies are soft, chewy and loaded with sugar-free chocolate chips. They are made with almond flour, butter and a low-carb sweetener. You can enjoy them as a snack or dessert without breaking your ketosis.

Ingredients:
โข 1/2 cup of butter (113 g)
โข 3/4 cup of granulated erythritol or monk fruit sweetener (144 g)
โข 1 egg
โข A pinch of salt
โข A few drops of vanilla extract
โข 2 cups of almond flour (224 g)
โข 1/2 teaspoon of baking powder
โข 1/2 cup of sugar-free chocolate chips (85 g)
Instructions:
Preheat oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper or spray with cooking spray.
In a large bowl, beat the butter at room temperature with the sweetener until light and fluffy. Add the vanilla extract, salt and egg and mix well.
Sift the almond flour and baking powder and add them to the butter mixture. Stir until well combined. Fold in the chocolate chips.
Form a ball of soft dough and refrigerate for at least 30 minutes.
Roll out the dough about 1/4 inch thick and cut out circles with a cookie cutter or a glass. Place them on the prepared baking sheet, leaving some space between them.
Bake for about 7 minutes or until the edges of the cookies are slightly golden. Donโt overbake them or they will become too hard as they cool.
Let them cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
