Keto Duchess Potatoes are a delicious, and keto-friendly side dish. It is made of mashed Cauliflower which mimics the taste of Mashed Potatoes which is why the dish is named Keto Duchess “Potatoes”. As everyone knows when we are on the Keto-diet we can’t have potatoes because of their high carbohydrate content so this Keto Version of the recipe swaps Potatoes with Cauliflower to make it highly Keto-friendly and Healthy as well. It is better to eat it fresh but you can store the left swirls in a sealed box in the fridge and eat within two or three days by just toasting it up when you want to eat.

EQUIPMENT:
- A Saucepan
- An Oven
- A Baking Sheet
- A Piping Bag
INGREDIENTS:
- 340 grams of cauliflower florets
- 170 grams of Sharp cheddar cheese, Shredded.
- Two Egg yolks, Large.
- 57 grams of Cream cheese
- A Quarter cup of Coconut flour
- Garlic cloves 2
- Half tsp. of pepper
- ½ cup of water
- Salt 3/4 tsp.
- A tablespoon of melted butter.

INSTRUCTIONS:
- Place a large saucepan over the normal flame, Add Water, cauliflower, and Garlic. Keep it on a normal flame to cook for 5 or 8 minutes once the Boil comes.
- Then strain it using a sieve.
- Take a blender and add Cheddar Cheese, Cream Cheese, Egg Yolks, Salt, Coconut Flour, Pepper, cooked Cauliflower, and Garlic.
- Blend until a smooth paste with soft peaks like whipped cream is formed.
- If you didn’t get the required texture, then add more Coconut flour.
- Once you get the required texture of that paste then fill it in the piping bag with an open star nozzle tip.
- Set the oven to 350 F, cover the baking sheet with the sheet of parchment, and apply a light layer of oil on the paper.
- Now pipe that paste on the prepared baking Sheet in the form of Swirls. It will make about 18 Swirls of equal size.
- Now insert the Baking Sheet in the Oven for about twenty minutes.
- Remove it out from the Oven after 10 minutes, apply the melted butter then insert them in the Oven again till they are golden and crispy.
TIPS:
- Steam both Cauliflower and Garlic till they both become tender when the fork is inserted.
- Cauliflower has so much moisture so, coconut flour and cream cheese help to adjust the texture just like the whipped cream.
- These cauliflower swirls stick badly to the pan, it is recommended to cover the baking sheet with the paper of parchment and apply a thin layer of any oil to separate the swirls from the parchment sheet.

STORAGE INSTRUCTIONS:
Their appearance doesn’t look appealing as they slightly change their colour and lose their crispiness so, it is better to eat them fresh.
If you have any Duchess potato swirls left then keep them covered in a sealed container and use them within three days while keeping them cold in the Fridge.
