Ingredients:

For the Caramel:

  • 1/4 cup keto-friendly sweetener (such as erythritol or stevia)
  • 2 tablespoons water

For the Custard:

  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1 teaspoon pure vanilla extract
  • 1/4 cup keto-friendly sweetener
  • A pinch of salt

Instructions:

Making the Caramel:

  1. In a small saucepan over medium-low heat, combine the keto-friendly sweetener and water. Stir continuously until the sweetener dissolves and the mixture turns into a deep amber caramel, about 5-7 minutes.
  2. Quickly pour the caramel into the bottom of 6 ramekins, swirling to coat the bottoms evenly. Set aside to cool.

Making the Custard:

  1. Preheat your oven to 325ยฐF (160ยฐC).
  2. In a mixing bowl, whisk together the eggs, unsweetened almond milk, pure vanilla extract, keto-friendly sweetener, and a pinch of salt until well combined.
  3. Carefully pour the custard mixture over the caramel in the ramekins.
  4. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  5. Cover the baking dish with aluminum foil, sealing it tightly.
  6. Bake in the preheated oven for 45 minutes, or until the flans are set but still slightly jiggly in the center.
  7. Remove the flans from the water bath and let them cool to room temperature.
  8. Refrigerate the flans for at least 2 hours or until fully chilled.
