  • 1 pound radishes, washed, trimmed, and halved
  • 4 Italian sausages (choose a variety without added sugars or fillers)
  • 2 bell peppers (red and green), sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the sausages and cook for about 5 minutes, turning occasionally until they’re browned on all sides.
  2. Remove the sausages from the skillet and set them aside. In the same skillet, add the radishes and cook for about 10 minutes, or until they start to turn golden and slightly tender.
  3. Add the sliced peppers, onions, and minced garlic to the skillet. Sauté for an additional 5-7 minutes, or until the vegetables are soft and fragrant.
  4. Slice the cooked sausages into bite-sized pieces and return them to the skillet. Season the entire mixture with Italian seasoning, salt, and pepper. Continue to cook for an additional 3-5 minutes to heat everything through.
  5. Garnish with fresh parsley before serving.
