Ingredients:

3/4 cup almond flour
2 tablespoons coconut flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sparkling water or unsweetened soda water (carbonated water)
2 large eggs
Cooking oil for frying (such as coconut oil, avocado oil, or ghee)

Instructions:

In a mixing bowl, combine the almond flour, coconut flour, baking soda, baking powder, and salt. Mix well.

In a separate bowl, beat the eggs. Then, slowly add the sparkling water and mix until well combined.

Gradually pour the wet mixture into the dry mixture, stirring until you have a smooth batter. If itโ€™s too thick, you can add a bit more sparkling water to reach your desired consistency.

Heat the cooking oil in a deep fryer or a large, deep skillet to 350ยฐF (175ยฐC).

Dip fish or chicken filets into the batter, ensuring they are fully coated.

Carefully place the battered fish or chicken into the hot oil and fry until they are a nice golden brown and cooked through. The cooking time will vary depending on the thickness of your pieces, but itโ€™s typically around 4-6 minutes per side for fish and 6-8 minutes per side for chicken.

Remove the cooked pieces from the oil and place them on a paper towel-lined plate to drain any excess oil.
