Ingredients:
3/4 cup almond flour
2 tablespoons coconut flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sparkling water or unsweetened soda water (carbonated water)
2 large eggs
Cooking oil for frying (such as coconut oil, avocado oil, or ghee)
Instructions:
In a mixing bowl, combine the almond flour, coconut flour, baking soda, baking powder, and salt. Mix well.
In a separate bowl, beat the eggs. Then, slowly add the sparkling water and mix until well combined.
Gradually pour the wet mixture into the dry mixture, stirring until you have a smooth batter. If it’s too thick, you can add a bit more sparkling water to reach your desired consistency.
Heat the cooking oil in a deep fryer or a large, deep skillet to 350°F (175°C).
Dip fish or chicken filets into the batter, ensuring they are fully coated.
Carefully place the battered fish or chicken into the hot oil and fry until they are a nice golden brown and cooked through. The cooking time will vary depending on the thickness of your pieces, but it’s typically around 4-6 minutes per side for fish and 6-8 minutes per side for chicken.
Remove the cooked pieces from the oil and place them on a paper towel-lined plate to drain any excess oil.
