For the Keto Pizza Crust:

  • 1 ½ cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 1 ½ cups almond flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon Italian seasoning
  • Pinch of salt

For the Pizza Toppings:

  • 1/2 cup sugar-free tomato sauce or tomato paste
  • 1 1/2 cups shredded mozzarella cheese
  • 4 slices of cooked bacon, crumbled
  • 4 ounces cooked Italian sausage, crumbled
  • 4 slices of pepperoni
  • 2 tablespoons sliced black olives (optional)
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until both cheeses are fully melted and well combined.
  3. In a separate bowl, mix the almond flour, eggs, baking powder, Italian seasoning, and a pinch of salt. Add the melted cheese mixture and knead until it forms a dough.
  4. Roll out the dough between two sheets of parchment paper to your desired pizza crust thickness.
  5. Remove the top parchment paper and transfer the crust, with the bottom parchment, onto a baking sheet or pizza stone.
  6. Bake the crust in the preheated oven for 7-10 minutes or until it starts to turn golden.
  7. Remove the crust from the oven and spread the sugar-free tomato sauce evenly over it. Sprinkle half of the shredded mozzarella cheese on top.
  8. Add the crumbled bacon, cooked Italian sausage, pepperoni slices, and black olives (if using) as toppings. Sprinkle the remaining mozzarella cheese on top.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes or until the cheese is bubbly and golden.
  10. Optionally, garnish with crushed red pepper flakes and fresh basil leaves before serving.
