For the Keto Pizza Crust:
- 1 ½ cups shredded mozzarella cheese
- 2 ounces cream cheese
- 1 ½ cups almond flour
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon Italian seasoning
- Pinch of salt
For the Pizza Toppings:
- 1/2 cup sugar-free tomato sauce or tomato paste
- 1 1/2 cups shredded mozzarella cheese
- 4 slices of cooked bacon, crumbled
- 4 ounces cooked Italian sausage, crumbled
- 4 slices of pepperoni
- 2 tablespoons sliced black olives (optional)
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh basil leaves for garnish (optional)
Instructions:
- Preheat your oven to 425°F (220°C).
- In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until both cheeses are fully melted and well combined.
- In a separate bowl, mix the almond flour, eggs, baking powder, Italian seasoning, and a pinch of salt. Add the melted cheese mixture and knead until it forms a dough.
- Roll out the dough between two sheets of parchment paper to your desired pizza crust thickness.
- Remove the top parchment paper and transfer the crust, with the bottom parchment, onto a baking sheet or pizza stone.
- Bake the crust in the preheated oven for 7-10 minutes or until it starts to turn golden.
- Remove the crust from the oven and spread the sugar-free tomato sauce evenly over it. Sprinkle half of the shredded mozzarella cheese on top.
- Add the crumbled bacon, cooked Italian sausage, pepperoni slices, and black olives (if using) as toppings. Sprinkle the remaining mozzarella cheese on top.
- Return the pizza to the oven and bake for an additional 5-7 minutes or until the cheese is bubbly and golden.
- Optionally, garnish with crushed red pepper flakes and fresh basil leaves before serving.
