Ingredients:

For the Caramel Layer:

  • 1/2 cup unsalted butter
  • 1/2 cup powdered erythritol or your preferred keto sweetener
  • 1/4 cup heavy cream
  • 1/2 tsp vanilla extract
  • A pinch of salt

For the Nut Layer:

  • 1 1/2 cups unsalted peanuts or your choice of nuts (almonds, pecans, or a mix)
  • 1/4 cup almond flour
  • 2 tbsp powdered erythritol
  • 2 tbsp unsalted butter, melted
  • A pinch of salt

Instructions:

  1. Prepare the Caramel Layer: In a saucepan, melt the butter over low heat. Stir in the powdered erythritol and cook until it’s fully dissolved and the mixture turns golden brown, about 5-7 minutes. Be careful not to burn it.
  2. Add Cream and Flavor: Remove the saucepan from heat and slowly whisk in the heavy cream. Return it to low heat and cook for an additional 2-3 minutes until the caramel thickens. Remove from heat, add vanilla extract, and a pinch of salt. Allow it to cool.
  3. Make the Nut Layer: In a mixing bowl, combine the unsalted peanuts (or your choice of nuts), almond flour, powdered erythritol, melted butter, and a pinch of salt. Mix until well combined.
  4. Layer and Cool: Line a small baking dish with parchment paper. Spread half of the nut mixture evenly across the bottom. Pour the caramel sauce over the nut layer. Top with the remaining nut mixture, pressing it down gently.
  5. Chill and Cut: Refrigerate for at least 2 hours or until the bars are set. Once set, remove from the fridge and cut into 8 bars.
