For the Chaffles:
- 1 cup shredded mozzarella cheese
- 1/4 cup almond flour
- 2 large eggs
- 1/2 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
For the Reuben Filling:
- 1/2 cup cooked corned beef, chopped
- 1/2 cup sauerkraut, drained and squeezed dry
- 1/2 cup shredded Swiss cheese
- Sugar-free thousand island dressing (store-bought or homemade) for dipping
Instructions:
For the Chaffles:
- Preheat your waffle maker or chaffle iron.
- In a mixing bowl, combine the shredded mozzarella cheese, almond flour, eggs, baking powder, garlic powder, onion powder, salt, and pepper. Mix well until all the ingredients are thoroughly combined.
- Divide the chaffle batter into two equal portions.
