Ingredients:
For the Pizza Crust:
- 2 cups shredded mozzarella cheese
- 2 ounces cream cheese
- 1 1/2 cups almond flour
- 1 large egg
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For the Topping:
- 1/2 cup sugar-free marinara sauce
- 1/2 cup cooked and crumbled sausage
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 4 large eggs
- Chopped fresh parsley for garnish (optional)
Instructions:
For the Pizza Crust:
- Preheat your oven to 425°F (220°C).
- In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second increments, stirring in between, until the cheeses are melted and well combined.
- Add the almond flour, large egg, garlic powder, salt, and pepper to the melted cheese mixture. Mix until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out into a circular shape, about 1/4-inch thick.
- Transfer the rolled-out dough, with the bottom parchment paper, onto a pizza stone or baking sheet. Bake in the preheated oven for 8-10 minutes or until it starts to turn golden.
For the Topping:
- Once the crust is partially baked, remove it from the oven and spread the sugar-free marinara sauce evenly over the crust.
- Sprinkle the cooked and crumbled sausage, shredded cheddar cheese, and shredded mozzarella cheese over the sauce.
- Create four small wells in the cheese and crack an egg into each well.
- Return the pizza to the oven and bake for an additional 10-12 minutes or until the eggs are set to your liking and the cheese is bubbly and golden.
- Remove from the oven, garnish with chopped fresh parsley if desired, and let it cool for a few minutes before slicing and serving.
