  • 1 large spaghetti squash (about 3-4 pounds)
  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup sugar-free marinara sauce
  • 1/2 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish


  1. Preheat your oven to 375°F (190°C).
  2. Carefully slice the spaghetti squash in half lengthwise. Scoop out the seeds and stringy pulp with a spoon.
  3. Place the spaghetti squash halves, cut side down, on a baking sheet lined with parchment paper. Bake in the preheated oven for about 40 minutes or until the squash is tender and can be easily scraped with a fork to form spaghetti-like strands.
  4. While the spaghetti squash is baking, prepare the meat sauce. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  5. Add the diced onion and minced garlic to the skillet with the cooked beef. Cook until the onion becomes translucent and the garlic becomes fragrant.
  6. Pour the sugar-free marinara sauce into the skillet, stirring to combine. Let the meat sauce simmer for 5-10 minutes, allowing the flavors to meld together. Season with salt, pepper, dried basil, and dried oregano to taste.

  11. Next, layer half of the ricotta cheese mixture on top of the meat sauce in each squash half.
  12. Repeat the layers by adding the remaining meat sauce over the ricotta cheese.
  13. Sprinkle additional shredded mozzarella cheese and grated Parmesan cheese on top for added cheesiness.
  14. Return the filled spaghetti squash halves to the oven and bake for an additional 20-25 minutes, or until the cheese is bubbly and slightly golden.
