  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 14-ounce can diced tomatoes (with juice)
  • 4 cups beef or chicken broth (homemade or store-bought)
  • 1 6-ounce can tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup riced cauliflower (optional, for added texture)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large soup pot, brown the ground beef over medium-high heat. Break it into crumbles as it cooks. If using ground turkey, you may need to add a little olive oil to prevent sticking.
  2. Once the meat is browned, add the chopped onion and garlic to the pot. Cook for a few minutes until the onion becomes translucent and fragrant.
  3. Stir in the chopped green, red, and yellow bell peppers, and cook for another 3-4 minutes until they begin to soften.
  4. Add the diced tomatoes with their juice, beef or chicken broth, tomato paste, Italian seasoning, salt, and pepper. Stir well to combine.
  5. If you’d like to add some texture to your soup, toss in the riced cauliflower at this point.
  6. Bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, allowing the flavors to meld.
