- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 14-ounce can diced tomatoes (with juice)
- 4 cups beef or chicken broth (homemade or store-bought)
- 1 6-ounce can tomato paste
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup riced cauliflower (optional, for added texture)
- Chopped fresh parsley for garnish (optional)
Instructions:
- In a large soup pot, brown the ground beef over medium-high heat. Break it into crumbles as it cooks. If using ground turkey, you may need to add a little olive oil to prevent sticking.
- Once the meat is browned, add the chopped onion and garlic to the pot. Cook for a few minutes until the onion becomes translucent and fragrant.
- Stir in the chopped green, red, and yellow bell peppers, and cook for another 3-4 minutes until they begin to soften.
- Add the diced tomatoes with their juice, beef or chicken broth, tomato paste, Italian seasoning, salt, and pepper. Stir well to combine.
- If you’d like to add some texture to your soup, toss in the riced cauliflower at this point.
- Bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, allowing the flavors to meld.
- Taste and adjust the seasoning as needed.
