Ingredients:
For the Casserole:
- 1 lb (450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (make sure it’s low carb)
- 1/2 cup diced tomatoes (canned or fresh)
- 1/4 cup sliced black olives (optional)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 1/4 cup sliced pickled jalapeรฑos (optional)
- Salt and pepper to taste
For the “Dorito” Topping (Keto Version):
- 1 cup crushed pork rinds
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
Instructions:
For the Casserole:
- Preheat your oven to 350ยฐF (175ยฐC).
- In a skillet over medium-high heat, brown the ground beef.
- Add diced onion and minced garlic to the skillet and cook until the onion is translucent.
- Stir in the taco seasoning and diced tomatoes. Cook for another 2-3 minutes.
- Remove the skillet from heat and stir in sliced black olives if desired.
- In a separate bowl, mix together shredded cheddar cheese, sour cream, diced green bell pepper, diced red bell pepper, and sliced pickled jalapeรฑos (if using).
- Season the mixture with salt and pepper to taste.
- Spread the beef mixture evenly in the bottom of a greased casserole dish.
For the “Dorito” Topping (Keto Version):
- In a bowl, combine crushed pork rinds, grated Parmesan cheese, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
- Sprinkle the pork rind mixture evenly over the beef mixture in the casserole dish.
- Bake for 25-30 minutes or until the casserole is bubbly and the topping is golden brown.
