Ingredients:

For the Casserole:

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (make sure it’s low carb)
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/4 cup sliced black olives (optional)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/4 cup sliced pickled jalapeรฑos (optional)
  • Salt and pepper to taste

For the “Dorito” Topping (Keto Version):

  • 1 cup crushed pork rinds
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Instructions:

For the Casserole:

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. In a skillet over medium-high heat, brown the ground beef.
  3. Add diced onion and minced garlic to the skillet and cook until the onion is translucent.
  4. Stir in the taco seasoning and diced tomatoes. Cook for another 2-3 minutes.
  5. Remove the skillet from heat and stir in sliced black olives if desired.
  6. In a separate bowl, mix together shredded cheddar cheese, sour cream, diced green bell pepper, diced red bell pepper, and sliced pickled jalapeรฑos (if using).
  7. Season the mixture with salt and pepper to taste.
  8. Spread the beef mixture evenly in the bottom of a greased casserole dish.

For the “Dorito” Topping (Keto Version):

  1. In a bowl, combine crushed pork rinds, grated Parmesan cheese, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  2. Sprinkle the pork rind mixture evenly over the beef mixture in the casserole dish.
  3. Bake for 25-30 minutes or until the casserole is bubbly and the topping is golden brown.
  4. Let it cool for a few minutes before serving.
