Ingredients:

For the Chicken:

  • 1.5 lbs (680g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Teriyaki Sauce:

  • 1/4 cup soy sauce (or coconut aminos for a gluten-free version)
  • 2 tablespoons water
  • 1 tablespoon granulated erythritol (or your preferred keto-friendly sweetener)
  • 1 clove garlic, minced
  • 1/2 teaspoon ginger, minced
  • 1/4 teaspoon xanthan gum (for thickening, optional)
  • Sesame seeds and sliced green onions for garnish (optional)

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Season the chicken pieces with salt and pepper, then add them to the hot skillet. Cook until the chicken is browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
