- ยพย cupย heavy cream,ย (6 1/2 fl oz)
- 4ย eggs
- โ ย cupย almond flourย (160 ml)
- 2ย tablespoonsย arrowroot flour
- ยผย teaspoonย xanthan gum
- 1ย tablespoonย water
- ยฝย teaspoonย salt
- ยฝย cupย beef drippings,ย (4 1/2 fl oz) butter, shortening, or ghee
INSTRUCTIONS
- Whisk heavy cream in aย measuring cupย until creamy. Then, add the eggs, flour, xanthan gum, water, and salt.ย Whisk until smooth. Rest the mixture a room temperature forย 30 minutesย or overnight in the fridge for best results.
- Preheat the oven to 450ยฐFย (232ยฐC). Then, add one teaspoon of beef drippings, oil, butter, or ghee into each cup and set theย muffin tinย into the oven; heat forย 10 minutes.
- Carefully remove the tin and divide the batter into the cup; fill them evenly ยฝ of the way. The oil should sizzle.
- Bake until they have doubled in size and become crispy, for aboutย 15-25 minutes, depending on the oven range. Serve the Yorkshire puddings immediately, and enjoy!
