Ingredients:

  • 4 cups zucchini, sliced
  • 1 cup cooked chicken, shredded
  • ½ cup grated mozzarella cheese
  • ½ cup grated cheddar cheese
  • ¼ cup heavy cream
  • 2 large eggs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a casserole dish with olive oil.
  2. Heat a skillet over medium heat and add the olive oil. Sauté the minced garlic until fragrant.
  3. Add the sliced zucchini to the skillet and cook until slightly tender, about 5 minutes. Remove from heat.
  4. In a bowl, whisk together the heavy cream, eggs, dried oregano, salt, and black pepper.
  5. Layer half of the sautéed zucchini in the casserole dish, followed by half of the shredded chicken and grated cheeses.
  6. Pour half of the cream mixture over the layers.
  7. Repeat the layers with the remaining zucchini, chicken, and cheeses.
  8. Pour the remaining cream mixture over the top.
  9. Bake the casserole in the preheated oven for 25-30 minutes or until the top is golden brown and the casserole is set.
  10. Once done, let it cool slightly, garnish with fresh parsley, and serve.
