Ingredients:
- 4 cups zucchini, sliced
- 1 cup cooked chicken, shredded
- ½ cup grated mozzarella cheese
- ½ cup grated cheddar cheese
- ¼ cup heavy cream
- 2 large eggs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Fresh parsley for garnish
Instructions:
- Preheat your oven to 375°F (190°C) and grease a casserole dish with olive oil.
- Heat a skillet over medium heat and add the olive oil. Sauté the minced garlic until fragrant.
- Add the sliced zucchini to the skillet and cook until slightly tender, about 5 minutes. Remove from heat.
- In a bowl, whisk together the heavy cream, eggs, dried oregano, salt, and black pepper.
- Layer half of the sautéed zucchini in the casserole dish, followed by half of the shredded chicken and grated cheeses.
- Pour half of the cream mixture over the layers.
- Repeat the layers with the remaining zucchini, chicken, and cheeses.
- Pour the remaining cream mixture over the top.
- Bake the casserole in the preheated oven for 25-30 minutes or until the top is golden brown and the casserole is set.
- Once done, let it cool slightly, garnish with fresh parsley, and serve.
