Packed with layers of grilled chicken, crispy bacon, fresh veggies, and a savory spread, this sandwich offers a satisfying and guilt-free lunch option. In just 15 minutes of prep and another 15 minutes of cooking, you can relish a hearty sandwich that’s both delicious and keto-friendly.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 4 slices of cooked bacon
  • 4 large lettuce leaves (such as iceberg or romaine)
  • 1 medium tomato, sliced
  • 2 tbsp. mayonnaise
  • 1 tsp Dijon mustard
  • 4 slices of your preferred low-carb bread (almond flour, coconut flour, etc.)
  • Toothpicks for securing the sandwich

Instructions:

  1. Preheat a grill or stovetop grill pan over medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for about 6-7 minutes per side or until fully cooked.
  4. While the chicken is grilling, mix the mayonnaise and Dijon mustard in a small bowl to create the spread.
  5. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  6. Spread the mayonnaise mixture on one side of each bread slice.
  7. Place a lettuce leaf on two of the bread slices.
  8. Top the lettuce with a grilled chicken breast, followed by bacon slices and tomato slices.
  9. Place the remaining two slices of bread on top to form a sandwich.
  10. Secure the sandwich layers with toothpicks and cut the sandwich in half diagonally.
