Ingredients:
- 1 cup raw hazelnuts
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
- 1/4 cup coconut oil, melted
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 2-4 tablespoons unsweetened almond milk (adjust to desired consistency)
Instructions:
Roasting Hazelnuts:
- Preheat your oven to 350ยฐF (175ยฐC).
- Spread the raw hazelnuts evenly on a baking sheet.
- Roast the hazelnuts in the preheated oven for about 10 minutes, or until they become fragrant and the skins start to crack.
- Remove the hazelnuts from the oven and let them cool for a few minutes.
- Place the roasted hazelnuts in a clean kitchen towel and rub them together to remove most of the skins. Don’t worry if some skin remains.
Making the Chocolate Hazelnut Spread:
- In a food processor, combine the roasted hazelnuts, unsweetened cocoa powder, powdered erythritol, melted coconut oil, vanilla extract, and a pinch of salt.
- Process the mixture until smooth, scraping down the sides of the bowl as needed.
- Gradually add unsweetened almond milk, one tablespoon at a time, and continue to process until the spread reaches your desired consistency. You can make it thicker or thinner by adjusting the amount of almond milk.
- Taste and adjust sweetness or saltiness as needed.
- Transfer the low carb chocolate hazelnut spread to an airtight container.
Note: Store the spread in the refrigerator for up to two weeks.
