Ingredients:

  • 1 cup raw hazelnuts
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • 2-4 tablespoons unsweetened almond milk (adjust to desired consistency)

Instructions:

Roasting Hazelnuts:

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. Spread the raw hazelnuts evenly on a baking sheet.
  3. Roast the hazelnuts in the preheated oven for about 10 minutes, or until they become fragrant and the skins start to crack.
  4. Remove the hazelnuts from the oven and let them cool for a few minutes.
  5. Place the roasted hazelnuts in a clean kitchen towel and rub them together to remove most of the skins. Don’t worry if some skin remains.

Making the Chocolate Hazelnut Spread:

  1. In a food processor, combine the roasted hazelnuts, unsweetened cocoa powder, powdered erythritol, melted coconut oil, vanilla extract, and a pinch of salt.
  2. Process the mixture until smooth, scraping down the sides of the bowl as needed.
  3. Gradually add unsweetened almond milk, one tablespoon at a time, and continue to process until the spread reaches your desired consistency. You can make it thicker or thinner by adjusting the amount of almond milk.
  4. Taste and adjust sweetness or saltiness as needed.
  5. Transfer the low carb chocolate hazelnut spread to an airtight container.

Note: Store the spread in the refrigerator for up to two weeks.
