Ingredients:

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 can (14 oz/400g) diced tomatoes
  • 2 cups chopped cauliflower florets
  • 1 cup sliced celery
  • 1 cup sliced carrots (use sparingly for lower carbs)
  • 1/2 cup sliced green beans
  • 1/2 cup sliced bell peppers (red, green, or yellow)
  • 1/4 cup heavy cream
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large pot or Dutch oven over medium-high heat, brown the ground beef until it’s no longer pink. Break it up with a spoon as it cooks.
