Ingredients:

  • 2 large zucchinis, thinly sliced lengthwise
  • 1 pound thinly sliced steak (ribeye or sirloin)
  • 1 onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 8 ounces sliced mushrooms
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 slices provolone cheese

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with cooking spray.
  2. Heat olive oil in a skillet over medium heat. Add sliced onions and green bell peppers. Sauté until softened and slightly caramelized.
  3. Push the vegetables to one side of the skillet and add the steak slices. Cook until browned. Season with garlic powder, onion powder, salt, and pepper. Mix the steak with the vegetables.
  4. In a separate skillet, sauté the sliced mushrooms until they release their moisture and turn golden.
  5. Assemble the lasagna: Lay half of the zucchini slices on the bottom of the prepared baking dish. Top with half of the steak and vegetable mixture, followed by half of the mushrooms. Place half of the provolone cheese slices over the mushrooms.
  6. Repeat the layers with the remaining ingredients: zucchini, steak mixture, mushrooms, and provolone cheese.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Let the lasagna cool for a few minutes before slicing and serving.
