Ingredients:

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

For the Filling and Glaze:

  • 1/2 cup sugar-free raspberry jam
  • 4 oz dark chocolate (85% cocoa or higher)
  • 1/2 cup heavy cream
  • 1 tablespoon powdered erythritol

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together the almond flour, cocoa powder, powdered erythritol, baking powder, and salt.
  3. In another bowl, beat the eggs, melted butter, heavy cream, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.
  5. Pour the batter into the prepared cake pan and bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  7. Once the cake has cooled, carefully slice it in half horizontally to create two layers.
  8. Spread the sugar-free raspberry jam over the bottom layer and place the other layer on top.
