- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs
- 1/4 cup unsalted butter, melted
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
For the Filling and Glaze:
- 1/2 cup sugar-free raspberry jam
- 4 oz dark chocolate (85% cocoa or higher)
- 1/2 cup heavy cream
- 1 tablespoon powdered erythritol
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, whisk together the almond flour, cocoa powder, powdered erythritol, baking powder, and salt.
- In another bowl, beat the eggs, melted butter, heavy cream, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.
- Pour the batter into the prepared cake pan and bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
- Once the cake has cooled, carefully slice it in half horizontally to create two layers.
- Spread the sugar-free raspberry jam over the bottom layer and place the other layer on top.
- For the glaze, melt the dark chocolate and heavy cream together in a microwave or double boiler. Stir in the powdered erythritol.
- Pour the chocolate glaze over the top of the cake, allowing it to drip down the sides.
