  • 1 lb ground beef or turkey
  • 1 medium cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers (assorted colors)
  • 1/4 cup chopped onions
  • 1 can (14 oz) diced tomatoes, drained
  • 2 tbsp taco seasoning
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)


  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef or turkey until browned. Drain any excess fat.
  3. Add the diced onions and bell peppers to the skillet and sauté until they soften.
