1 cup chopped pecans
1 (8 ounce) package cream cheese, softened
5 tablespoons powdered erythritol or a keto-friendly sweetener
1 cup unsweetened almond milk or coconut milk
2/3 cup sugar-free maple syrup (adjust to taste)
6 large eggs
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon salt
Additional sugar-free maple syrup for serving (optional)
Instructions:
- Place cubed low-carb bread in a greased 9ร13 inch baking dish and gently press down. Sprinkle with pecans.
- In a large mixing bowl, beat cream cheese and powdered erythritol (or your chosen keto sweetener) until fluffy. Gradually mix in almond milk (or coconut milk) and sugar-free maple syrup.
- In a separate large mixing bowl, whisk together eggs, vanilla extract, ground cinnamon, and salt. Fold this mixture into the cream cheese and milk mixture.
- Very slowly, pour the mixture evenly over the bread in the baking dish.
- Cover the dish and refrigerate overnight.
- Remove from the refrigerator 30 minutes before baking.
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Bake the dish, covered, for 30-35 minutes or until the center is set and the top is lightly golden brown.
