1 package of keto-friendly bread stuffing mix (look for almond flour-based or coconut flour-based)
1 cup of hot water
2 packages of keto-friendly brown gravy mix (low-carb and sugar-free, one for the meatloaf and one for the top)
1.5 lbs ground beef (choose a lean option)
1 cup cold water
2 large eggs, beaten

In a medium bowl, add the keto-friendly bread stuffing mix and 1 cup of hot water. Allow the stuffing to sit for 5 minutes.
Meanwhile, in another medium bowl, mix one package of keto-friendly brown gravy mix with 1 cup of cold water.
In a large bowl, combine the ground beef and beaten eggs. Mix thoroughly (using your hands works best).
After the stuffing has rested for 5 minutes, stir the stuffing mixture into the ground beef mixture.
Grease a bundt pan with non-stick cooking spray.
Press the ground beef and stuffing mixture into the pan.
Bake at 350 degrees for 45-55 minutes or until the inside is no longer pink.
Once baked, let the meatloaf rest for about 5 minutes, then invert the pan onto a plate.
Serve with keto-friendly mashed cauliflower or mashed turnips, and keto-friendly brown gravy served on the side.
