Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb lean ground beef
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1/2 cup frozen corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes from the inside. Rinse the bell peppers under cold water and set them aside.
  3. In a large skillet, cook the ground beef over medium-high heat until it’s browned and cooked through. Drain any excess fat from the skillet.
  4. Add the finely diced onion and minced garlic to the skillet with the ground beef. Sauté for 2-3 minutes, or until the onions become translucent and the garlic is fragrant.
  5. Stir in the drained diced tomatoes, cooked rice, frozen corn kernels, and black beans. Mix everything together until well combined.
  6. Season the mixture with chili powder, ground cumin, paprika, salt, and black pepper. Adjust the seasonings to suit your taste.
  7. Remove the skillet from the heat and let the filling cool slightly.
  8. Stuff each bell pepper with the ground beef and rice mixture, packing it in tightly.
  9. Place the stuffed bell peppers in a baking dish that’s large enough to hold them upright.
  10. Cover the baking dish with foil and bake the stuffed bell peppers in the preheated oven for 30 minutes.
  11. After 30 minutes, remove the foil from the baking dish and sprinkle shredded cheddar or mozzarella cheese on top of each stuffed bell pepper.
  12. Return the baking dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  13. Once the stuffed bell peppers are fully cooked and the cheese is golden brown, remove them from the oven.
  14. Optional: Garnish the stuffed bell peppers with fresh parsley or cilantro for a burst of color and freshness.

Note: Feel free to customize the filling by adding your favorite vegetables or using ground turkey instead of beef for a leaner option.
