Ingredients:
- 2 medium zucchinis, grated
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons almond flour
- 1 egg
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Cooking spray for greasing
Instructions:
- Start by grating the zucchinis and then place them in a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible from the grated zucchinis.
- In a microwave-safe bowl, microwave the squeezed zucchini for 2-3 minutes or until it’s mostly dry. Let it cool for a few minutes.
- In a mixing bowl, combine the dried zucchini, shredded mozzarella cheese, almond flour, egg, salt, garlic powder, and black pepper. Mix until the ingredients are well combined.
