Ingredients:
- 8 large eggs
- 1/4 cup diced bell peppers (any color)
- 1/4 cup diced cooked bacon or ham
- 1/4 cup shredded cheddar cheese
- 2 tbsp. chopped fresh spinach or kale
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375ยฐF (190ยฐC) and grease a muffin tin or line it with silicone muffin cups.
- In a bowl, whisk the eggs until well combined.
- Divide the diced bell peppers, cooked bacon or ham, shredded cheddar cheese, and chopped spinach or kale among the muffin cups.
- Pour the whisked eggs over the fillings in each muffin cup, filling them about 3/4 full.
- Season with salt and pepper to taste.
