4 ripe bananas
1/2 cup erythritol or your preferred keto-friendly sweetener
3 tablespoons lemon juice (from fresh lemons)
4 large eggs
1/2 cup vegetable oil (or a keto-friendly oil like coconut oil)
200g almond flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons banana flavor extract

Preheat your oven to 175°C (350°F) and prepare a cake pan by greasing it with some oil and dusting it with almond flour.

In a blender, combine the ripe bananas, erythritol (or your chosen sweetener), lemon juice, eggs, and vegetable oil. Blend until the mixture is smooth.

Transfer the blended batter into a mixing bowl.

Add almond flour, baking powder, salt, and banana flavor extract to the bowl. Mix until all the ingredients are evenly combined.

Pour the batter into the prepared cake pan and tap it gently to remove any trapped air bubbles.

Bake in the preheated oven for approximately 40 minutes or until a toothpick inserted into the center of the cake comes out dry.
