Ingredients:
- 4 slices of keto-friendly bread
- 4 oz. cream cheese, softened
- 1 tbsp. powdered erythritol or your preferred keto sweetener
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1 large egg
- 1/4 cup almond flour
- 1/4 tsp ground cinnamon
- Butter or coconut oil for frying
Instructions:
- In a bowl, mix the softened cream cheese, powdered sweetener, vanilla extract, and 1/2 tsp of ground cinnamon until well combined.
- Lay out the slices of keto-friendly bread and spread the cream cheese mixture evenly over each slice.
- Carefully roll up each slice of bread with the cream cheese side inwards.
- In a shallow dish, whisk the egg.
- In another shallow dish, combine almond flour and 1/4 tsp of ground cinnamon.
- Dip each roll-up into the beaten egg and then coat it with the almond flour mixture.
- In a skillet, melt butter or coconut oil over medium heat.
- Place the roll-ups in the skillet and cook until all sides are golden brown and crispy.
- Remove from the skillet and let them cool slightly before serving.
