Ingredients:

For the Salad:

  • 4 cups mixed salad greens (lettuce, spinach, arugula, etc.)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup black olives, pitted
  • 1/4 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese (optional)

For the Italian Vinaigrette:

  • 1/4 cup extra-virgin olive oil
  • 1 cup chopped broccoli florets
  • 1 cup chopped cauliflower florets
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions:

For the Italian Vinaigrette:

  1. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and black pepper. Set the dressing aside.

For the Salad:

  1. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, chopped broccoli, chopped cauliflower, sliced cucumber, thinly sliced red onion, black olives, and fresh basil leaves.
  2. If desired, sprinkle the grated Parmesan cheese over the top of the salad ingredients.
