Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower florets, chopped into small pieces
  • 1/4 cup diced onions
  • 1/4 cup diced celery
  • 1/4 cup diced carrots (in moderation for keto)
  • 1/4 cup frozen peas (in moderation for keto)
  • 1/4 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tbsp butter
  • 2 tbsp almond flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Instructions:

  1. Prepare the Filling: In a skillet, melt the butter over medium heat. Add diced onions, celery, and (if using) carrots. Sautรฉ until they begin to soften. Stir in the almond flour and cook for an additional minute.
  2. Add the Cream and Broth: Slowly add the heavy cream and chicken broth, stirring continuously until the mixture thickens.
  3. Season and Add Chicken: Stir in the salt, black pepper, thyme, rosemary, garlic powder, and onion powder. Add the shredded chicken and cauliflower. Cook until the cauliflower is tender, and the mixture is thick and creamy. If using peas, add them now.
  4. Assemble the Mini Pies: Preheat your oven to 375ยฐF (190ยฐC). Spoon the chicken mixture into individual ramekins or small oven-safe bowls.
  5. Top with Crust: If you’d like a crust, you can use a keto-friendly pie crust or almond flour biscuit dough as a topper. Place a small piece over each ramekin.
  6. Bake: Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
